One of my favorite things to do on a Sunday is food prep for the week. It makes things so much less chaotic for us during the weekdays and I love having easy, healthy options that I can quickly heat up.
This week, I decided to try out Overnight Oats for the first time. I added Cinnamon, Almond Butter, Collagen, and Stevia. Click here for the basic recipe that I modified with the ingredients above. I made my own coconut milk for this recipe. Simply add 2 cups organic coconut flakes to 4 cups water in the Vitamix and blend on high for 4-5 minutes. I added Himalayan salt to mine. Strain through a cheesecloth and bottle up for use in recipes and smoothies during the week. Store in fridge for 3-4 days.
I found organic asparagus and brussel sprouts on sale at Whole Foods, so I cooked up a big batch for easy meal sides during the week.
I sauteed the brussel sprouts in avocado oil with Himalayan salt, a pinch of cayenne pepper, garlic powder, white truffle ghee, and chicken bone broth. Once they were a little charred, I put them in the oven at 350 for about 15 minutes to soften.
I drizzled the asparagus with avocado oil + balsamic vinegar and seasoned with all seasoning salt and pepper. I put those in while the brussel sprouts were cooking for 350 for 15 minutes.
I also made Turmeric Spanish Brown Rice. I used this basic brown rice recipe with some modifications. I added ground turmeric, salt, pepper, chili powder, cayenne pepper, and one can of organic diced tomatoes. I tripled the recipe so we can eat this all week long.
I love having eggs for an easy meal, so I made some soft boiled eggs for the next few days. I add eggs from Seven Sons Farm (link below) to water over high heat for 14 minutes. It usually starts boiling just before the time is up and I immediately transfer them to an ice bath.
Vic is going to be making crockpot ribs for us tomorrow! We got organic ribs from Seven Sons Farm and will be cooking them on low in the crockpot with Annie’s BBQ Sauce. Yum!
I’m also using the pulp left over from the coconut milk to make some Banana Muffins. I usually skip the honey in the linked recipe.
